Easy Meals: Tomato Pasta

If you haven’t been to the Container Store, do yourself a favor and go. It’s easily one of the most interesting stores you’ll ever go in. I bet you didn’t realize how many things could contain other things.

On a not-s0-recent trip I impulse bought the August issue of Real Simple. I’m a sucker for a real hold-it-in-your-hand-magazine.

They had a quick feature about tomatoes, which gave you some info on how to choose, store and prepare these tasty fruits (yes, tomatoes are fruits not vegetables) and four ways to use them.

One simple way was Easy Tomato Pasta.

In a large bowl combine chopped tomatoes, thinly sliced garlic, olive oil, salt, pepper and a pinch of crushed red pepper. Let sit at room temperature, stirring occasionally for at least an hour. Toss with cooked pasta and chopped fresh basil.

It’s jut as easy and yummy as it sounds.

Personally, I would nix the sliced garlic and go for crushed or minced as sliced can be too much even for this garlic lover.

You can alter this simple idea in dozens of ways. Yesterday, I added fresh mozzarella and feta cheese.
